Indonesia) | ABSTRAK Ikan tongkol jika penanganannya tidak tepat akan mengalami penurunan mutu, yang diakibatkan oleh kontaminasi bakteri Salmonella sp. jeruk nipis juga memiliki pH yang sangat rendah karena memiliki kandungan asam sitrat dengan konsentrasi tinggi, flavonoid, yang menjadi faktor penghambat pertumbuhan bakteri. Tujuan penelitian adalah untuk mengetahui efek antibakteri air jeruk nipis terhadap isolat Salmonella sp pada ikan tongkol. Penelitian menggunakan metode true eksperimental posttest-only with Control group Design. Sampel Salmonella sp pada ikan tongkol berasal dari Cilacap. Sampel dibagi menjadi 6 kelompok konsentrasi 0%, 20%, 40%, 60%, 80%, 100% lalu membandingkan kelompok pertumbuhan Salmonella sp yang diberi aquades sebagai kontrol negatif dengan metode Lay. Rancangan percobaan pada penelitian ini menggunakan Rancangan Acak Lengkap (RAL). Analisis untuk menguji perbedaan bermakna konsentrasi jeruk nipis menggunakan uji Kruskal-Wallis, kemudian diuji menggunakan Post hoc Mann-Whitney. Hasil pengujian Kruskal-Wallis menujukan bahwa terdapat signifikan (p-value 0.019 < 0.05). Hasil Pengujian Post Hoc Mann-Whitney memiliki perbedaan bermakna (0,029< 0.05) pada konsentrasi 20% dengan penghambatan 99.90%, konsentrasi 40% dengan penghambatan 99.96%, konsentrasi 60% dengan penghambatan 99.97%, konsentrasi 80% dengan penghambatan 99,98%, konsentrasi 100% dengan penghambatan 99,99%. Hasil pengujian korelasi (0.729 > 0.409) atau 0.000 < 0.05 berarti konsentrasi perasan air jeruk nipis dengan penghambatan pertumbuhan isolat Salmonella sp pada ikan tongkol memiliki hubungan yang kuat. Kesimpulan Air jeruk nipis memiliki efek antibakterial terhadap pertumbuhan isolate Salmonella sp pada ikan tongkol. | Abtrak (Bhs. Inggris) | Mackarel tuna if not handled properly will decrease the quality, bacterial contamination caused by Salmonella sp. Lemon juice also has a very low pH of 2.0 because it contains high concentrations of citric acid, flavonoid which is a factor inhibiting the growth of bacteria. The research objective was to determine the antibacterial activity against isolates of lime juice to Salmonella sp on mackarel tuna. Research using true experimental method posttest-only with Control Group Design. Sampling was done in a way to intervene by providing lime juice concentration of 20%, 40%, 60%, 80%, 100% and then compare the growth of Salmonella sp groups were given distilled water as a negative control methods Lay. The experimental design in this study using a completely randomized design (CRD). Analysis to examine the data using the Saphiro wilk normality, to test the significant differences in the concentration of lime using Kruskal-Wallis, and then use the Post hoc Mann-Whitney . Kruskal-Wallis test results showed that there were significant (p-value 0.019 <0.05). Post Hoc Testing Results Mann-Whitney has a significant difference (0.029 <0.05) inhibition concentration of 20% to 99.90%, with a concentration of 40% inhibition of 99.96%, with a concentration of 60% inhibition of 99.97%, with a concentration of 80% inhibition of 99.98%, 100% inhibitory concentration by 99.99%. The test results of correlation (0.729> 0.409) or 0.000> 0.05 means that the concentration of lime juice with inhibition of the growth of isolates of Salmonella sp on swordfish have a strong relationship. Conclusion lime juice have antibacterial effect on the growth isolate Salmonella sp fish on the cob (Euthynnus affinis).
