Optimalisasi Inventori Adonan Pukis Menggunakan Material Requirement Planning (MRP) untuk Mengatasi Fluktuasi Permintaan (Studi Pada Pukis Rizqi Jakarta Barat)

Fluktuasi permintaan pada UMKM Pukis Rizqi menyebabkan ketidakpastian dalam perencanaan kebutuhan bahan baku sehingga berpotensi menimbulkan kelebihan maupun kekurangan persediaan. Penelitian ini bertujuan untuk menentukan metode peramalan yang paling akurat, menyusun Material Requirement Planning (MRP), membandingkan teknik lot sizing menggunakan metode Lot For Lot (LFL), Economic Order Quantity (EOQ), dan Period Order Quantity (POQ), serta menentukan metode yang menghasilkan biaya persediaan paling rendah. Penelitian ini menggunakan metode kuantitatif dengan pendekatan studi kasus pada UMKM Pukis Rizqi Jakarta Barat. Data yang digunakan berupa data penjualan bulanan periode Januari 2023–Desember 2025, Bill of Material (BOM), biaya pemesanan, biaya penyimpanan, dan data persediaan. Teknik pengumpulan data dilakukan melalui observasi, wawancara, dan dokumentasi. Analisis data dilakukan menggunakan metode Moving Average (MA), Weighted Moving Average (WMA), Single Exponential Smoothing (SES), dilanjutkan dengan penyusunan Master Production Schedule (MPS), Material Requirement Planning (MRP), dan analisis teknik lot sizing. Hasil penelitian menunjukkan bahwa metode Single Exponential Smoothing (SES) dengan α = 0,1 merupakan metode peramalan terbaik dengan nilai MAD sebesar 1.704, MSE sebesar 5.226.233, dan MAPE sebesar 13%. Hasil analisis lot sizing menunjukkan bahwa metode Economic Order Quantity (EOQ) menghasilkan total biaya persediaan terendah sebesar Rp718.341, lebih rendah dibandingkan metode Lot For Lot (LFL) sebesar Rp1.848.000 dan Period Order Quantity (POQ) sebesar Rp3.682.995. Dengan demikian, penerapan MRP menggunakan metode EOQ dapat mengoptimalkan pengelolaan inventori bahan baku adonan pukis melalui penurunan total biaya persediaan dan perencanaan kebutuhan bahan baku yang lebih efektif.

Fluctuations in demand at the Pukis Rizqi MSME have led to uncertainty in raw material requirements planning, potentially resulting in either excess or shortages of inventory. This study aims to determine the most accurate forecasting method, develop a Material Requirements Planning (MRP) system, compare lot sizing techniques using the Lot-for-Lot (LFL), Economic Order Quantity (EOQ), and Period Order Quantity (POQ) methods, and identify the method that results in the lowest inventory costs. This study employs a quantitative method using a case study approach at the Pukis Rizqi SME in West Jakarta. The data used include monthly sales data for the period January 2023–December 2025, the Bill of Materials (BOM), ordering costs, storage costs, and inventory data. Data collection was conducted through observation, interviews, and documentation. Data analysis was performed using the Moving Average (MA), Weighted Moving Average (WMA), and Single Exponential Smoothing (SES) methods, followed by the development of a Master Production Schedule (MPS), Material Requirements Planning (MRP), and lot sizing analysis. The results of the study show that the Single Exponential Smoothing (SES) method with α = 0.1 is the best forecasting method, with a MAD of 1,704, an MSE of 5,226,233, and a MAPE of 13%. The results of the lot sizing analysis show that the Economic Order Quantity (EOQ) method yields the lowest total inventory cost of Rp718,341, which is lower than the Lot-for-Lot (LFL method at Rp1,848,000 and the Period Order Quantity (POQ) method at Rp3,682,995. Thus, implementing MRP using the EOQ method can optimize the inventory management of pukis dough raw materials by reducing total inventory costs and enabling more effective raw material demand planning.
