ANALISIS HUBUNGAN ANTARA BAHAN KERING TANPA LEMAK DAN TOTAL PADATAN PADA BERAT JENIS SUSU KAMBING SAPERA

Kambing Sapera mampu memproduksi susu cukup tinggi dan mengandung kadar lemak yang lebih tinggi daripada susu sapi. Kadar lemak susu berkorelasi negatif dengan berat jenis, tetapi berkorelasi positif dengan total padatan, sehingga digunakan parameter berat jenis, bahan kering tanpa lemak, dan total padatan untuk menentukan kualitas dan harga susu. Tujuan penelitian ini untuk menganalisis kadar berat jenis, bahan kering tanpa lemak, dan total padatan pada susu Kambing Sapera serta hubungan antar peubah tersebut. Materi penelitian yang digunakan berjumlah 30 sampel susu yang terdiri 15 dari masing-masing Siliwangi Farm dan Gaza Farm. Hasil penelitian menunjukkan berat jenis memiliki rata-rata, maksimal, dan minimal berturut-turut 1,028g/ml; 1,030g/ml; 1,024g/ml. Bahan kering tanpa lemak memiliki rata-rata, maksimal, dan minimal berturut-turut 7,992%; 8,635%; 7,17%. Total padatan memiliki rata-rata, maksimal, dan minimal berturut-turut 12,572%; 14,640%; 11,165%. Hasil Uji-T menunjukkan bahwa kadar berat jenis, bahan kering tanpa lemak, dan total padatan antara kedua farm tersebut berbeda tidak nyata (P>0,05). Terdapat hubungan positif yang sangat kuat dan pengaruh yang lebih besar antara berat jenis dan bahan kering tanpa lemak dimana nilai R2 = 0,8005 dan R = 0,895 dengan persamaan y = 0,0032x + 1,0023. Indikator kualitas susu dapat ditentukan berdasarkan berat jenis, bahan kering tanpa lemak, dan total padatan pada susu.

Sapera goats are able to produce quite high milk and contain higher fat content than cow's milk. Milk fat content is negatively correlated with specific gravity, but positively correlated with total solids, so the parameters of specific gravity, solid non fat, and total solids are used to determine the quality and price of milk. The purpose of this study was to analyze the levels of specific gravity, solid non fat, and total solids in Sapera goat milk and the relationship between these variables. The research material used was 30 milk samples consisting of 15 from each of Siliwangi Farm and Gaza Farm. The results showed that specific gravity had an average, maximum, and minimum of 1.028g/ml; 1.030g/ml; 1.024g/ml. Solid non fat had an average, maximum, and minimum of 7.992%; 8.635%; 7.17%. Total solids had an average, maximum, and minimum of 12.572%; 14.640%; 11.165%. The T-test results showed that the levels of specific gravity, solid non fat, and total solids between the two farms were not significantly different (P>0.05). There is a very strong positive correlation and a greater influence between specific gravity and solid non fat where the R2 value = 0.8005 and R = 0.895 with the equation y = 0.0032x + 1.0023. Milk quality indicators can be determined based on specific gravity, solid non fat, and total solids in milk.
