Pengkajian Kadar Protein, Lemak dan Laktosa Susu Segar di Kecamatan Cilongok dan Sumbang Kabupaten Banyumas

MEI DWI CAHYANI.Tujuan penelitian ini adalah untuk mengkaji kadar protein, lemak, laktosa susu segar dan hubungan antar peubah tersebut baik secara linier maupun berganda di Kecamatan Cilongok dan Sumbang, Kabupaten Banyumas. Materi penelitian yang digunakan adalah sampel susu segar yang berasal dari peternakan di Kecamatan Cilongok (17 peternak) dan Kecamatan Sumbang (23 peternak), selain itu diambil sampel ransum yang digunakan sebagai data pendukung. Hasil penelitian menunjukan rataan kadar lemak, protein dan laktosa Kecamatan Cilongok yaitu 2,84±0,65%; 3,03±0,12%; 4,54±0,18%, sedangkan di Kecamatan Sumbang yaitu 3,63±0,52%; 3,06±0,15%; 4,6±0,23%. Rataan hasil evaluasi kecukupan pakan di Kecamatan Cilongok yang terdiri dari BK, PK, TDN adalah -0,008 kg; +0,53 kg; +2,32 kg, sedanglan di Kecamatan Sumbang sebesar +0,88 kg; +0,67 kg; +2,62 kg. Hasil uji beda “t” menunjukan bahwa kadar lemak di kedua Kecamatan tersebut berbeda nyata (P<0,005), sedangkan kadar protein dan lemak berbeda tidak nyata (P>0,005). Terdapat hubungan yang lemak baik regresinya (R2 : 0,08) maupun korelasinya (R: 0,29) antara lemak dengan protein dan laktosa susu segar. Hubungan tersebut dapat diformulasikan sebagai Y= 1,185 – 91,97X1 + 61,74X2 (P>0,05). Dapat disimpulkan meskipun lemak susu segar dikedua kecamatan tersebut berbeda namun kadar lemak, protein dan laktosanya masih tergolong bagus dan sesuai dengan SNI (2011).

The aim of this research is to examine the levels of protein, fat and lactose in fresh milk and the relationship between these variables both linearly and in multiples in Cilongok and Sumbang Districts, Banyumas Regency. The research material used was fresh milk samples originating from farms in Cilongok District (17 breeders) and Sumbang District (23 breeders), in addition to that, ration samples were taken which were used as supporting data. The research results showed that the average levels of fat, protein and lactose in Cilongok District were 22.84 ± 0.65%; 3.03±0.12%; 4.54 ± 0.18%, while in Sumbang District it is 3.63 ± 0.52% 3.06±0.15%; 4.6 ± 0.23%. The average result of the evaluation of feed adequacy in Cilongok District which consists of BK, PK, TDN is -0.008 kg; +0.53 kg; +2.32 kg, while in Sumbang District it was +0.88 kg; +0.67 kg; +2.62 kg. The results of the "t" difference test showed that the fat levels in the two sub-districts were significantly different (P<0.005), while the protein and fat levels were not significantly different (P>0.005). There is a relationship between fat, both regression (R2: 0,08) and correlation (R: 0,29) between fat and protein and lactose in fresh milk. This relationship can be formulated as Y= 1.185 – 91.97X1 + 61.74X2 (P>0.05). It can be concluded that although the fresh milk fat in the two sub-districts is different, the fat, protein and lactose levels are still relatively good and in accordance with SNI (2011).
