PENGUKURAN KINERJA HALAL SUPPLY CHAIN MANAGEMENT PADA KANTIN HALAL SOEDIRMAN DENGAN PENDEKATAN SUPPLY CHAIN OPERATIONS REFERENCE (SCOR) 12.0 DAN FUZZY ANALYTICAL HIERARCHY PROCESS (FAHP)

Indonesia adalah negara dengan penduduk muslim terbanyak di dunia sehingga memiliki potensi pasar yang besar bagi industri halal dunia. Produk makanan dan minuman merupakan aspek penting dalam industri halal. Salah satu penyedia makanan dan minuman yang sering dijumpai saat ini adalah usaha pelayanan makanan (foodservice) seperti Kantin Halal Soedirman. Sehubungan dengan hal tersebut, usaha pelayanan makanan (foodservice) harus bisa menjamin kehalalan produk yang disediakan dengan cara mengelola rantai pasok halal dalam proses bisnisnya. Adapun tujuan penelitian ini adalah untuk mengetahui kinerja rantai pasok halal di Kantin Halal Soedirman untuk membantu kantin dalam meningkatkan kinerja agar bisa bersaing dalam industri halal. Penelitian dilakukan dengan cara mengobservasi kondisi atau kegiatan di lokasi penelitian, kemudian juga melakukan wawancara serta membagikan kuisioner penilaian metriks yang telah dipetakan sesuai SCOR 12.0 kepada 6 responden yang merupakan pengelola Kantin Halal Soedirman. Kemudian dilakukan pembobotan metriks dengan metode Fuzzy AHP dan perhitungan nilai akhir kinerja untuk selanjutnya dianalisis menggunakan metrode Traffic Light System. Hasil penelitian menunjukkan bahwa terdapat lima proses bisnis utama yang terdiri dari plan, source, make, deliver, dan enable. Selain itu juga didapati 34 metriks, dimana empat diantaranya telah sesuai dengan nilai-nilai keislaman yaitu : cleanliness od the production site, halal raw materials do not mixed with non-halal products, halal raw material, dan halal certification and halal logo on product packaging. Setelah keseluruhan metriks dianalisis menggunakan Traffic Light System, didapati 31 metriks dengan indikator berwarna hijau, 1 metriks dengan indikator berwarna kuning, dan 2 indikator berwarna merah. Secara keseluruhan didapati bahwa nilai kinerja rantai pasok Halal di Kantin Halal Soedirman adalah sebesar 90,16% dengan kategori memuaskan atau sangat baik.

Indonesia is the country with the most muslim population in the world, so it has a large market potential for the world halal industry. Food and beverage products are important aspect of the halal industry. One of the food and beverage providers that are often found today is foodservice business such as Kantin Halal Soedirman. In this regard, foodservice businesses must be able to guarantee the halality of the products provided by managing the halal supply chain in their business processes. The purpose of this study is to determine the performance of the halal supply chain in Kantin Halal Soedirman to assist the canteen in improving performance in order to compete in the halal industry. The study was conducted by observing conditions or activities at the research location, then also conducting interviews and distributing metrics assessement questionnaires that had been mapped according to SCOR 12.0 to 6 respondents who were managers of the Kantin Halal Soedirman. Then metrics weighting is carried out using the Fuzzy AHP method and the calculation of the final score of performance for further analysis unsing Traffic Light System method. Based of the results of the study, there are five main business processes were found consisting of plan, source, make, deliver, and enable. There are also found 34 metrics which 4 metrics were accordance with islamic value consisting of cleanliness of the production site, halal raw materials do not mixed with non-halal products, halal raw material, and halal certification and halal logo on product packaging. After all metrics were analyzed using Traffic Light System, 31 metrics were found with green indicators, 1 metric with yellow indicators, and 2 metrics with red indicators. Overall, it was found that the performance value of Kantin Halal Soedirman’s halal supply chain was 90,16% with satisfactory or very good category.
