Naik turunnya harga cabai rawit merah salah satunya disebabkan ketidakseimbangan antara permintaan dan penawaran. Harga yang berfluktuasi pada cabai rawit merah sangat menentukan volatilitas, baik volatilitas harga di tingkat konsumen maupun produsen, dimana harga komoditas tersebut sangat dipengaruhi kondisi pasokan produksi petani. Penelitian ini dilakukan dengan tujuan : (1) Mengetahui volatilitas harga produsen cabai rawit merah di Kabupaten Kebumen, (2) Mengetahui volatilitas harga konsumen cabai rawit merah di Kabupaten Kebumen, (3) Mengetahui faktor-faktor yang mempengaruhi volatilitas harga cabai rawit merah di Kabupaten Kebumen. Penelitian ini menggunakan data sekunder berupa harga konsumen dan produsen cabai rawit merah bulanan periode Januari 2017 sampai dengan Desember 2021 di Kabupaten Kebumen. Metode analisis yang digunakan adalah ARCH (Autoregressive Conditional Heterocedasticity) dan GARCH (Generalized Autoregressive Conditional Heterocedasticity). Hasil penelitian : (1) Volatilitas harga produsen cabai rawit merah di Kabupaten Kebumen menunjukkan volatilitas rendah dengan nilai koefisien sebesar 0,171429 (2) konsumen cabai rawit merah di Kabupaten Kebumen menunjukkan volatilitas rendah dengan nilai koefisien yang sama yaitu 0,171429, (3) Faktor produksi cabai rawit merah, harga cabai merah besar, harga bawang merah, harga 2 bulan sebelumnya, curah hujan, dummy puasa, dummy hari raya, dummy natal, dan dummy tahun baru secara bersama-sama berpengaruh signifikan terhadap harga cabai rawit merah di Kabupaten Kebumen

One of the reasons for the rise and fall in the price of red cayenne pepper is the imbalance between supply and demand.The fluctuating price of red cayenne pepper greatly determines volatility, both price volatility at the consumer and producer level, where the price of this commodity is greatly influenced by the supply conditions of farmers' production. This research was conducted with the aim of: (1) Knowing the price volatility of red cayenne pepper producers in Kebumen Regency (2) Knowing the volatility of consumer prices for red cayenne pepper in Kebumen Regency (3) Knowing the factors that influence the price volatility of red cayenne pepper in Kebumen Regency.This research uses secondary data in the form of monthly consumer and producer prices for red cayenne pepper for the period January 2017 to December 2021 in Kebumen Regency. The analysis method used is ARCH (Autoregressive Conditional Heterocedasticity) and GARCH (Generalized Autoregressive Conditional Heterocedasticity).Research results: (1) The volatility of producer price for red cayenne pepper in Kebumen regency shows low volatility with the coefficient value, namely 0.171429. (2) The volatility of consumer prices for red cayenne pepper in Kebumen Regency shows low volatility with the same coefficient value, namely 0.171429. (3). The production factors of red cayenne pepper, the price of large red chilies, the price of red onions, the price of the previous 2 months, rainfall, fasting dummy, holiday dummy, Christmas dummy and New Year dummy together have a significant effect on the volatility of the price of red cayenne pepper in Kebumen Regency.
