Pola Konsumsi dan Kepedulian Terhadap Keamanan Pangan Minuman Es di Kabupaten Purbalingga

Minuman es merupakan pangan jajanan yang mudah tercemar mikroba apabila penyiapan dan penanganan kurang baik. Tingkat risiko bahaya bergantung dari paparan yang ditentukan oleh prevalensi dan konsentrasi mikroba serta takaran konsumsi individu. Tujuan dari penelitian ini adalah: 1) Mengetahui jumlah konsumsi pangan minuman es di Kabupaten Purbalingga dalam berbagai golongan komunitas, 2) Mengetahui tingkat pengetahuan responden mengenai titik kritis pengolahan minuman es di Kabupaten Purbalingga, 3) Mengetahui tingkat kepedulian responden sebagai konsumen minuman es terhadap kebersihan jajanan yang mereka konsumsi sebagai salah satu faktor penentu keamanan pangan, menggunakan metode semi quantitative food frequency questionnaire (SQ-FFQ). Lokasi survei konsumen dilakukan secara sengaja (purposive) di Kabupaten Purbalingga dengan responden yang mengonsumsi minuman es. Survei dilakukan terhadap 300 responden laki-laki dan perempuan pada tiga golongan usia dengan tiga strata penghasilan dan tingkat pendidikan akhir. Penelitian dilakukan dengan beberapa tahap. Adapun tahapannya dimulai dengan menentukan jumlah responden berdasarkan usia, jenis kelamin, pendapatan, dan pendidikan akhir, wawancara dan penyebaran kuesioner kepada responden konsumen minuman es di sekitar lingkungan sekolah dan keramaian umum lain, kemudian analisis data menggunakan program komputer IBM SPSS Statistics 20 dengan uji compare means dan chi-square. Hasil penelitian menunjukkan responden paling banyak (52%) mengonsumsi minuman es dengan kategori minuman es berperisa dibandingkan dengan minuman es lainnya dengan rerata konsumsi 182 ml/hari/orang. Analisis compare means menunjukkan jumlah konsumsi minuman es tidak dipengaruhi oleh usia dan jenis kelamin, tetapi dipengaruhi oleh besarnya pendapatan. Tingkat pengetahuan dan kepedulian konsumen minuman es di Kabupaten Purbalingga terhadap keamanan pangan sudah baik (>80%). Berdasarkan analisis Chi-Square, tingkat pengetahuan dan kepedulian tidak dipengaruhi oleh usia, jenis kelamin, maupun pendidikan akhir. Namun, jika dilihat dari pesentase jawaban benar, faktor utama dari tingkat pengetahuan dan kepedulian adalah pendidikan akhir. Kesimpulan dari hasil penelitian adalah jumlah konsumsi minuman estidak dipengaruhi oleh usia dan jenis kelamin, tetapi dipengaruhi oleh besarnya pendapatan, dengan rerata konsumsi minuman es masyarakat di Kabupaten Purbalingga adalah 135 ml/orang/hari. Tingkat pengetahuan dan kepedulian konsumen minuman es di Kabupaten Purbalingga terhadap keamanan pangan sudah baik (>80%).

Ice drinks are snacks that are easily contaminated with microbes if the preparation and handling are not good. The level of risk of harm depends on exposure, which is determined by the prevalence and concentration of microbes and individual consumption rates. The aims of this study were: 1) To find out the amount of food consumption of iced drinks in Purbalingga Regency in various community groups, 2) To find out the level of knowledge of respondents about the critical point of processing iced drinks in Purbalingga Regency, 3) To know the level of concern of respondents as consumers of iced drinks for cleanliness the snacks they consume as one of the determining factors for food safety, using the semi quantitative food frequency questionnaire (SQ-FFQ) method. The location of the consumer survey was carried out purposively in Purbalingga Regency with respondents consuming iced drinks. The survey was conducted on 300 male and female respondents in three age groups with three income strata and final education level. The research was conducted in several stages. The stages begin with determining the number of respondents based on age, gender, income, and final education, interviewing and distributing questionnaires to respondents who consume iced drinks around the school environment and other public crowds, then analyze the data using the IBM SPSS Statistics 20 computer program with a compare test. means and chi-square. The results showed that the most respondents (52%) consumed iced drinks in the flavored iced drinks category compared to other iced drinks with an average consumption of 182 mL/day/person. The compare means analysis shows that the amount of ice drink consumption is not affected by age and gender, but is influenced by the amount of income. The level of knowledge and concern of ice drink consumers in Purbalingga Regency towards food safety is good (> 80%). Based on the ChiSquare analysis, the level of knowledge and concern is not affected by age, gender or final education. However, when viewed from the percentage of correct answers, the main factor for the level of knowledge and concern is final education.
