KADAR PROTEIN SUSU SEGAR, LAMA ANALISIS DAN BIAYA PADA METODE KJEDAHL DAN BRADFORD

Metode Kjeldhal merupakan metode standar analisis kadar protein susu yang telah diakui oleh Association of Official Agricultural Chemists (AOAC) serta Standar Nasional Indonesia (SNI) dan metode Bradford sebagai metode alternatif pengujian kadar protein susu sehingga perlu dilakukan penelitian ini yang bertujuan untuk mengkaji kelayakan metode Bradford dalam pengujian kadar protein dan mengetahui metode pengukuran kadar protein yang lebih akurat. Materi penelitian menggunakan 30 sampel susu sapi segar berasal dari peternakan sapi perah Baturraden dan masing-masing diukur protein susu, lama analisis dan biaya analisis. Data yang diperoleh dianalisis menggunakan analisis deskriptif dan uji t (Paired Two Sample for Means) dengan bantuan aplikasi Excel. Hasil yang diperoleh dari rataan kadar protein, lama analisis dan biaya analisis metode Kjedahl (3,16%; 95 menit/sampel;Rp 9.141/sampel). Metode Bradford (2,70%; 16 menit/sampel; Rp 2000/sampel). Uji beda menyatakan bahwa metode Kjedahl dan Bradford berbeda nyata (P<0,05). Disimpulkan bahwa metode Bradford dinilai kurang tepat sebagai metode pengukuran kadar protein pada susu dan hasil kadar protein antara metode Kjeldahl dan Bradford berbeda serta rata-rata kadar protein pada metode Bradford di bawah standar mutu kadar protein susu yang telah ditetapkan oleh SNI.

The Kjeldhal method is a standard method of analyzing milk protein content that has been recognized by the Association of Official Agricultural Chemists (AOAC) and the Indonesian National Standard (SNI) and the Bradford method as an alternative method of testing milk protein levels, so this research is necessary to study the feasibility of the Bradford method. in testing protein levels and knowing more accurate methods of measuring protein levels. The research material used 30 samples of fresh cow's milk from Baturraden dairy farm and each measured milk protein, length of analysis and cost of analysis. The data obtained were analyzed using descriptive analysis and t-test (Paired Two Sample for Means) with the help of the Excel application. The results obtained from the average protein content, length of analysis and analysis cost of the Kjedahl method (3.16%; 95 minutes/sample; Rp. 9,141/sample). Bradford Method (2.70%; 16 minutes/sample; IDR 2000/sample). The difference test stated that the Kjedahl and Bradford methods were significantly different (P<0.05). It was concluded that the Bradford method was considered inappropriate as a method of measuring protein content in milk and the results of protein levels between the Kjeldahl and Bradford methods were different and the average protein content in the Bradford method was below the quality standard of milk protein content set by SNI.
