Agroindustri pengolahan hasil pertanian yang berkembang di Indonesia salah satunya yaitu agroindustri kecap. Kecap merupakan cairan cokelat gelap yang memiliki aroma khas dan rasa asin yang biasa ditambahkan sebagai penyedap masakan. Manajemen biaya dan modal yang baik dalam suatu usaha sangat diperlukan mendapat efisiensi penggunaan modal dalam menghasilkan keuntungan. Nilai profitabilitas dalam suatu usaha menunjukkan perbandingan pendapatan dan kemampuan perusahaan dalam menghasilkan laba pada berbagai tingkat operasi sehingga rasio ini akan mencerminkan efektifitas keberhasilan manajemen secara keseluruhan. Penelitian ini bertujuan untuk 1) mengetahui biaya produksi dan penjualan Kecap Samiroso dalam satu bulan, 2) mengetahui tingkat pendapatan yang diperoleh Kecap Samiroso dalam satu bulan, dan 3) mengetahui tingkat profitabilitas usaha Kecap Samiroso. Penelitian dilaksanakan di Pabrik Kecap Samiroso Desa Kutowinangun, Kecamatan Kutowinangun, Kabupaten Kebumen pada 8 September sampai 8 Oktober 2021. Objek penelitian ini adalah pabrik Kecap Manis Samiroso dan profiitabilitas industri kecap manis menggunakan metode deskriptif kuantitatif. Penarikan responden pada penelitian ini secara sengaja (purposive) pada pengusaha Agroindustri Kecap Samiroso (Burung Garuda) yang dianggap paling lama di Kabupaten Kebumen. Data yang digunakan dalam penelitian ini terdiri dari data primer dan data sekunder. Data primer diperoleh dari wawancara dengan pemilik ataupun karyawan Agroindustri Kecap Samiroso (Burung Garuda). Data sekunder diperoleh dari dokumen catatan yang dimiliki oleh perusahaan. Hasil penelitian menunjukkan bahwa biaya produksi Kecap Samiroso dalam satu bulan produksi adalah Rp.96.969.540,59 sedangkan penjualan sebesar Rp.138.915.000,00. Pendapatan yang diperoleh Kecap Samiroso dalam satu bulan produksi adalah Rp.37.750.913,47. Tingkat profitabilitas usaha Kecap Samiroso berdasarkan nilai Net Profit Margin, Gross Profit Margin, ROI, ROA, dan ROE yaitu sebesar 27,1%; 30,2%; 0,43; 39% dan 0,39.

One of the agroindustries for processing agricultural products in Indonesia is soy sauce agroindustry. Soy sauce is a dark brown liquid that has a distinctive smell and salty taste which is usually added as a flavoring dish. Good cost and capital management in a business is very necessary to get efficient use of capital in generating profits. The value of profilabilitas in an effort indicated revenues and corporate performance in profitability at various operating levels, which would reflect the effevtiveness of overall management. This study aims to 1) determine the production costs and revenues of Samiroso Soy Sauce in one month, 2) determine the level of income earned by Samiroso Soy Sauce in one month, and 3) determine the level of profitability of the Samiroso Soy Sauce business. The research was carried out at the Samiroso Soy Sauce Industry in Kutowinangun, Kutowinangun, Kebumen Regency from September 8 to October 8, 2021. The object of this research is the Samiroso Sweet Soy Sauce Industry and the profitability of the sweet soy sauce industry using a quantitative descriptive method. Withdrawal of respondents in this study purposively on the Soy Sauce Agroindustry Samiroso (Burung Garuda) which is considered the longest in Kebumen Regency. The data used in this study consisted of primary data and secondary data. Primary data was obtained by conducting interviews with owners or employees of the Samiroso (Burung Garuda) Soy Sauce Agroindustry. Secondary data is obtained from document records owned by the company. The results showed that the production cost of Samiroso soy sauce in one month of production was 96.969.540.59 IDR while the revenue was 138,915,000.00 IDR. The income obtained by Soy Sauce in one month of production is Rp.37.750.913,47 IDR. The level of profitability of the Samiroso Soy Sauce based on the value of Net Profit Margin, Gross Profit Margin, ROI, ROA, and ROE is 27,1%; 30.2%; 0.43; 39% and 0.39.
