Kopi instant gula kelapa yang diperkaya minyak sawit merah merupakan salah satu alternatif minuman fungsional yang diharapkan dapat meningkatkan suplai antioksidan pada perokok. Di samping itu, jenis kemasan yang digunakan dapat mempengaruhi mutu kopi instant selama penyimpanan. Penelitian ini bertujuan untuk 1) mengetahui pengaruh jumlah penambahan minyak sawit merah terhadap karakteristik kimia dan sensori kopi instant gula kelapa selama penyimpanan; 2) mengetahui pengaruh jenis kemasan terhadap karakteristik kimia dan sensori kopi instant gula kelapa yang ditambahkan dengan minyak sawit merah selama penyimpanan; 3) mengetahui kombinasi terbaik antara jumlah penambahan minyak sawit merah dan jenis kemasan terhadap karakteristik kimia dan sensori kopi instant gula kelapa selama penyimpanan. Penelitian ini dilakukan secara eksperimental dengan menggunakan Rancangan Acak Kelompok (RAK) yang disusun secara faktorial dengan 9 kombinasi perlakuan dan diulang 3 kali, sehingga menghasilkan 27 unit percobaan. Faktor yang diteliti terdiri dari 2 faktor yaitu jumlah penambahan minyak sawit merah yang terdiri dari 0,3% (M1); 0,4% (M2); 0,5% (M3) dan jenis kemasan terdiri dari plastik PP (K1); aluminium foil 50% (K2); aluminium foil 100% (K3). Hasil penelitian menunjukkan bahwa kombinasi perlakuan terbaik yaitu pada jumlah penambahan minyak sawit merah 0,4% yang dikemas dengan kemasan aluminium foil 50%  (M2K2) dengan karakteristik  kimia setelah disimpan sebagai berikut: kadar air 4,39%bb, kadar asam lemak bebas 0,112%bk, total fenol 1,38%, dan kadar antioksidan 83,45%. Adapun untuk karakteristik sensorinya adalah sebagai berikut: aroma mutu hedonik agak kuat (2,56), rasa pahit mutu hedonik agak pahit (2,96), rasa manis mutu hedonik manis (3,8), flavor mutu hedonik enak (3,56), off-flavor tidak kuat (2,08), aroma hedonik agak suka (3,16), rasa kopi hedonik agak suka (3,44), flavour hedonik suka (3,64), dan keseluruhan suka (3,64).

Coconut sugar-based instant coffee enriched with red palm oil is an alternative to functional drinks which is expected to increase the supply of antioxidant for smokers. Beside, The type of packaging used will affect the quality of instant coffee during storage. The aims of this research are: 1) to know the effect of the addition of red palm oil towards chemical and sensory properties of instant coffee during storage; 2) to know the effect of different type of packaging towards chemical and sensory properties of instant coffee during storage; 3) to know the best combination treatment between the addition of red palm oil and different type of packaging towards chemical and sensory properties of instant coffee during storage. This research was conducted experimentally by Randomized Block Design (RBD) which was arranged in factorial with 9 combination treatments, repeated 3 times and resulting 27 experimental units. The factors observed were the addition of red palm oil that consist 0,3% (M1); 0,4% (M2); 0,5% (M3) and different type of packaging which consist plastic PP (K1); aluminium foil 50 (K2); aluminium foil 100% (K3). The result of this research showed that the best combination treatment was instant coffee which made by adding 4% red palm oil using aluminium foil 50% (M2K2). The chemical characteristics of product after storage were: water content of 4,39%bb, free fatty acid of 0,112%bk, total phenolic of 1,38%, and antioxidant content of 83,45%. Beside the sensory characteristics were: aroma (hedonic quality) was ratherly strong (2,56), the bitterness (hedonic quality) was ratherly bitter (2,96), sweetness (hedonic quality) was sweet (3,8), the off-flavor (hedonic quality) was not strong (2,08), the flavor (hedonic quality) was delicious (3,56), aroma (hedonic) ratherly like (3,16), the taste of coffee (hedonic) ratherly like (3,44), the flavor (hedonic) like (3,64), and overall the preference was like (3,64).
