Penelitian dengan judul analisis biaya produksi susu sapi perah pada anggota koperasi pesat di Kabupaten Banyumas bertujuan: 1). Menganalisis struktur biaya produksi susu sapi perah di peternak anggota koperasi PESAT. 2) Mengetahui jumlah ternak, pendidikan peternak, umur peternak, dan pengalaman beternak peternak anggota koperasi PESAT. 3) Menganalisis pengaruh jumlah ternak, pendidikan peternak, umur peternak, dan pengalaman beternak terhadap biaya produksi susu sapi perah. Responden peternak sapi perah dipilih menggunakan teknik proportional random sampling. Jumlah responden total dipilih dengan menggunakan rumus Slovin, sehingga diperoleh 45 peternak. Variabel yang diamati dan diukur meliputi biaya produksi (Y), jumlah ternak (X1), pendidikan peternak (X2), umur peternak (X3), dan pengalaman beternak (X4). Biaya produksi merupakan keseluruhan biaya yang dikeluarkan pada usaha sapi perah, dengan rumus TC = FC + VC, dan pengaruh faktor sosial ekonomi terhadap biaya produksi dianalisis menggunakan regresi linier berganda. Hasil penelitian menunjukkan bahwa, rata-rata biaya produksi usaha sapi perah yaitu Rp 60.534.229/ tahun untuk 5 ST, rata-rata biaya tetap usaha sapi perah yaitu Rp 4.043.385/tahun untuk 5 ST, rata-rata biaya variabel usaha sapi perah yaitu Rp 56.490.844/tahun untuk 5 ST. Umur peternak sapi perah sebagian besar peternak (82,22%) berada pada usia produktif (15-64 tahun) dengan rataan 50 tahun, tingkat pendidikan peternak sapi perah sebagian besar (53,33%)  Sekolah Dasar (SD), pengalaman beternak sapi perah sebagian besar (51,11%) >10 tahun dengan rataan 16 tahun, jumlah kepemilikan ternak sebagian besar (51,11%) antara 3-5 ST dengan rataan 5,4 ST. Jumlah kepemilikan ternak berpengaruh (P<0,05) terhadap biaya produksi sapi perah, sehingga perlu adanya efisiensi biaya produksi per satuan ternak yang di miliki

The research with tittle analysis of production costs of milk in koperasi pesat in the District of Banyumas aims to: 1). analyzing the cost structure of milk for dairy cows in farmers of the PESAT cooperative. 2) Knowing the number of dairy cows, farmers education, age of farmers, and farming experience of members of the PESAT cooperative. 3) To analyze the effect of the number of dairy cows, farmer education, age of farmers, and farming experience on the production costs of milk for dairy cows. Respondents who are dairy farmers selected using a proportional random sampling technique. The total number of respondents was selected using the Slovin formula, in order to obtain 45 farmers. The variables to be observed and measured include production costs (Y), number of dairy cows (X1), farmer education (X2), age of farmers (X3), and farming experience (X4). Production costs are the total costs incurred in a dairy farming, with the formula TC = FC + VC, and the influence of socio-economic factors on production costs is analyzed using multiple linear regression. The results showed that the average production cost of a dairy farming was IDR 60,534,229 / year for 5 Animal Unit, the average fixed cost of a dairy cow farming is IDR 4,043,385 / year for 5 Animal Unit, the average variable cost of the dairy cow farming is IDR 56,490,844 / year for 5 Animal Unit. The age of most dairy cattle farmers (82,22%) are productive (15-64 years) with an average of 50 years, the education level of most dairy farmers (53,33%) is elementary school (SD), most of the dairy farming experience (51,11%)  is >10 years with an average of 16 years, most of the dairy cows ownership (51,11%) is between 3-5 Animal Unit with an average of 5.4 Animal Unit. The number of dairy cows ownership affects (P<0,05) the production costs of dairy cows, so there is a need for efficiency in production costs each animal unit owned.
