Dugaan Pemalsuan Susu Sapi Perah dengan Penambahan Santan Ditinjau dari Protein dan Kasein

"Dugaan Pemalsuan Susu Sapi Perah dengan Penambahan Santan Ditinjau dari Protein dan Kasein” dilaksanakan di Laboratorium Produksi Ternak Perah Fakultas Peternakan Universitas Jenderal Soedirman bertujuan untuk mengkaji pengaruh penambahan santan dengan persentase berbeda pada protein dan kasein susu sapi perah dan memberikan informasi ilmiah tentang penambahan susu sapi perah yang ditambah dengan santan. Sampel susu yang digunakan berasal dari Experimental Farm Fakultas Peternakan Universitas Jenderal Soedirman. Pengambilan sampel dilakukan pada pemerahan pagi hari sebanyak 500 ml per perlakuan. Penelitian tersebut menggunakan Rancangan Acak Lengkap (RAL) dengan metode experimental dan terdapat 6 perlakuan dengan 4 ulangan. Perlakuan yang digunakan yaitu penambahan susu segar dengan santan pada persentase 2%, 4%, 6%, 8% dan 10%. Analisis yang digunakan yaitu analisis variansi dengan uji lanjut yaitu uji Dunnet. Hasil penelitian menunjukkan bahwa, susu kontrol mengandung 3.61% protein dan kandungan protein dengan penambahan santan 2%, 4%, 6%, 8%, dan 10% secara berturut-turut adalah 3.04%, 2.56%, 2.33%, 2.31%, dan 2.26%. Kandungan kasein pada susu kontrol adalah 3.22% dan penambahan santan dengan persentase 2%, 4%, 6%, 8%, dan 10% secara berturut-turut adalah 2.71%, 2.28%, 2.08%, 2.06%, dan 2.02%. Hasil perhitungan F hitung lebih besar dari F tabel 0,05 dan 0,01 kemudian dilanjutkan dengan uji lanjut Dunnet. Diketahui bahwa protein dan kasein dengan penambahan 2% santan telah berpengaruh nyata terhadap kontrol. Hal tersebut menandakan bahwa penambahan santan sebanyak 2% ke dalam susu dapat mengurangi kandungan protein dan kasein susu.

"Alleged Alteration of Dairy Cow Milk with Addition of Coconut Milk in Terms of Protein and Casein" held at the Laboratory of Dairy Production at the Faculty of Animal Husbandry, General Soedirman University, aims to examine the effect of adding coconut milk with different percentages in the protein and casein of dairy cow's milk and provide scientific information about the addition of dairy cow's milk added with coconut milk. The milk samples used were from the Experimental Farm of the Faculty of Animal Husbandry, Jenderal Soedirman University. Sampling was done on morning milking as much as 500 ml per treatment. The study used a completely randomized design (CRD) with experimental methods and there were 6 treatments with 4 replications. The treatment used is the addition of fresh milk with coconut milk at a percentage of 2%, 4%, 6%, 8% and 10%. The analysis used is the analysis of variance with further tests, namely the Dunnet test. The results showed that, control milk containing 3.61% protein and protein content with the addition of coconut milk 2%, 4%, 6%, 8%, and 10% respectively were 3.04%, 2.56%, 2.33%, 2.31%, and 2.26%. The casein content in control milk was 3.22% and the addition of coconut milk with a percentage of 2%, 4%, 6%, 8%, and 10% respectively were 2.71%, 2.28%, 2.08%, 2.06%, and 2.02%. The results of the F calculation are greater than the F tables 0.05 and 0.01 then proceed with Dunnet further tests. It is known that protein and casein with the addition of 2% coconut milk have a significant effect on control. This indicates that the addition of 2% coconut milk into milk can reduce the protein content and casein of milk.
