Temulawak dapat dimanfaatkan sebagai jamu sediaan dan minuman segar. Penghilangan pati yang mengendap oleh pengeringan, ekstraksi dengan MAE, dan penyimpanan dingin dapat mempengaruhi kualitas dan kuantiatas kmponen aktif yang terkestrak. Faktor tersebut perlu dikendalikan untuk menentukan kualitas ekstrak air temulawak terbaik. Faktor penelitian ini adalah bentuk bahan dasartemulawak (B); rimpang temulawak segar (B1) dan serbuk temulawak (B2); ekstraksi berbantu gelombang mikro (M); tanpa MAE (M1) dan dengan MAE (M2); serta penyimpanan dingin (R);0 jam (R1) dan 12 jam (R2). Metode yang digunakan merupakan metode eksperimental dengan rancangan petak-petak terbagi (RPPT/Split-Split Plot).Hasil menunjukkan bahwa setiap perlakuan positif mengandung alkaloid, terpenoid, tanin, saponin dan glikosida. Perlakuan terbaik ditentukan dengan metode indeks efektivitas.Perlakuan terbaik ekstrak air temulawak didapatkan pada perlakuan bentuk bahan dasar rimpang temulawak segar yang di ekstraksi dengan metode MAE dan tanpa adanya perlakuan penyimpanan refrigerator 12 jam dengan total padatan terlarut 3,5 oBrix dan nilai kekeruhan 4,25.

Curcuma (Curcuma xanthorhiza Roxb) can be used as herband fresh drinks. Curcuma drink can be obtained by water extraction. Extraction of active components using water causes the starch to be extracted; which can be precipitated by various treatment such as drying, extraction method and storage temperature. Therefore, these factors need to be controlled to determine the quality of the best curcuma water extract. The research factors examined were: sample forms (B); fresh curcuma rhizome (B1) and curcuma powder (B2);Microwave Assisted Extraction (MAE) (M);without MAE (M1) and with MAE (M2); and cold storage (R); 0h (R1) and 12h (R2). The best treatment was determined using effectivity index test. The qualitative test show that every treatment positive contain alkaloid, terpenoid, tanin, saponin, and glikosida. The best treatment that gave best curcuma water extract obtained from fresh curcuma rhizomes extracted with microwave and without storage (0h). The extract has dissolved solid of 3,5 oBrix and terbudity value of 4,25.
