HUBUNGAN ANTARA BOBOT POTONG, BOBOT KARKAS, PANJANG KARKAS DAN FLESHING INDEX SAPI PERANAKAN ONGOLE (PO) YANG DI POTONG DI RUMAH PEMOTONGAN HEWAN BANJARSARI CIAMIS

Penelitian ini bertujuan untuk mengetahui hubungan antara bobot karkas dengan bobot potong, bobot karkas dengan panjang karkas serta fleshing index dengan bobot potong pada sapi peranakan Ongole yang di potong di RPH Banjarsari, Ciamis. Materi yang digunakan yaitu 25 ekor sapi Peranakan Ongole jantan dengan umur 24 sampai 36 bulan dan penetapan sampel berdasarkan Purposive Sampling. Sapi PO sebelum dipotong dilakukan penimbangan dengan menggunakan timbangan sapi merek Sonic dengan kapasitas 2000 kilogram dan ketelitian 0.1 kilogram. Bobot karkas didapatkan dari proses penimbangan karkas setelah dibagi empat dengan menggunakan timbangan merek CAS kapasitas 500 kilogram dengan ketelitian 0.01 kilogram, kemudian dilakukan pengukuran panjang karkas dengan pita ukur. Hasil Rataan bobot potong, bobot karkas, panjang karkas dan fleshing index masing-masing 400.48 ±49.22 kilogram, 191.52 ±31.12 kilogram, 155.80 ±17.26 centimeter dan 1.23 ±0.12 kilogram per centimeter. Hasil analisis regresi linier sederhana menyatakan hubungan antara bobot karkas dengan bobot potong sangat nyata (P<0.01) mengikuti persamaan BK = -46.970 + 0.596X dengan nilai korelasi (r = 0.94) dan nilai koefisien determinasi (r2 = 0.89). Bobot karkas dengan panjang karkas berhubungan sangat nyata (P<0.01) mengikuti persamaan BK = -39.207+ 1.481X dengan nilai korelasi (r = 0.821) dan nilai koefisien determinasi (r2 = 0.674). Fleshing index dengan bobot potong berhubungan sangat nyata (P<0.01) mengikuti persamaan FI = 0.369 + 0.02x dengan nilai korelasi (r = 0.668) dan koefisien determinasi (r2 = 0.446). Kesimpulannya bahwa bobot potong dapat digunakan untuk menduga bobot karkas dan fleshing index dan Panjang karkas dapat digunakan untuk menduga bobot karkas.

This research aimed to determine the relationship between carcass weights with slaughter weight, carcass weight with carcass length and fleshing index with slaughter weight in Ongole crossbreed cattle slaughtered in the Banjarsari RPH, Ciamis. The material used were 25 male Ongole crossbead cattle aged 24 to 36 months and the determination of samples based on Purposive Sampling. PO cattle before slaughtering were weighed using scale of Sonic brand cattle with a capacity of 2000 kilograms with an accuracy of 0.1 kilograms. Carcass weights were obtained by weighing using CAS brand scales of 500 kilograms with an accuracy of 0.01 kilograms, then carcass length measurements were made with a measuring tape. The average result of slaughter weight, carcass weight, carcass length and fleshing index were 400.48 ± 49.22 kilograms, 191.52 ± 31.12 kilograms, 155.80 ± 17.26 centimeters and 1.23 ± 0.12 kilograms per centimeter. The results of a simple linear regression analysis revealed the relationship between carcass weight and slaughter weight were significant (P <0.01) following the equation BK = -46,970 + 0.596X with a correlation value (r = 0.94) and the coefficient of determination (r2 = 0.89). The carcass weights with the carcass length correlated very significantly (P <0.01) following the equation BK = -39.207 + 1.481X with the correlation value (r = 0.821) and the coefficient of determination (r2 = 0.674). Fleshing index with the slaughter weight correlated very significantly (P <0.01) following the equation FI = 0.369 + 0.02x with the correlation value (r = 0.668) and the coefficient of determination (r2 = 0.446). The conclusion is that the slaughter weight can be used to estimate the carcass weight and fleshing index and carcass length can be used to estimate the carcass weight.
