Teh herbal merupakan produk minuman fungsional yang terdiri atas kombinasi dari bunga, daun, akar, dan batang yang dikeringkan. Bunga kecombrang (Etlingera elatior), kulit buah naga dan jahe merupakan contoh bahan baku untuk pembuatan teh herbal. Penelitian ini bertujuan untuk: 1) mengetahui proporsi bubuk bunga kecombrang : bubuk kulit buah naga : teh hitam terhadap aktivitas antioksidan teh bunga kecombrang; 2) mengetahui persentase bubuk jahe terhadap aktivitas antioksidan teh bunga kecombrang; 3) mengetahui pengaruh interaksi antara proporsi bubuk bunga kecombrang : bubuk kulit buah naga : teh hitam dengan persentase bubuk jahe terhadap aktivitas antioksidan teh bunga kecombrang. Rancangan penelitian ini dengan Rancangan Acak Kelompok (RAK) 2 faktor yaitu: faktor pertama yaitu  proporsi antara bubuk bunga kecombrang : bubuk kulit buah naga : teh hitam (b/b/b) yang terdiri atas tiga taraf  yaitu 80 : 15 : 5 (P1), 70 : 25 : 5 (P2), 60 : 35 : 5 (P3) dan faktor kedua yaitu persentase bubuk jahe (T) yang terdiri atas tiga taraf  yaitu 2, 4, dan 6%. Kombinasi perlakuan terbaik yaitu P3T3 (proporsi bubuk bunga kecombrang : bubuk kulit buah naga : teh hitam 60 : 35 : 5 dan persentase bubuk jahe 6%) dengan karakteristik kimia dan sensori sebagai berikut : kadar air 5,07%; aktivitas antioksidan 74,26%; total fenol 13,01 mg TAE/g; total flavonoid 2,20 mg QE/g; warna 2,73 (merah keunguan); aroma kecombrang 2,38 (sedikit kuat); aroma jahe 3,25 (agak kuat); flavour kecombrang 2,64 (agak kuat); flavour jahe 3,37 (agak kuat); dan kesukaan 3,38 (agak suka).

Herbal tea is a functional beverage product consisting of a combination of dried flowers, leaves, roots and stems. Kecombrang flower (Etlingera elatior), dragon fruit peel and ginger are examples of raw materials for making herbal tea. This study aims to: 1) determine the proportion of kecombrang flower powder: dragon fruit peel powder: black tea against the antioxidant activity of kecombrang flower tea; 2) determine the percentage of ginger powder on the antioxidant activity of kecombrang flower tea; 3) determine the effect of interaction between the proportion of kecombrang flower powder: dragon fruit peel powder: black tea with the percentage of ginger powder on the antioxidant activity of kecombrang flower tea. The design of this study with a randomized block design (RAK) 2 factors, namely: the first factor is the proportion between kecombrang flower powder: dragon fruit skin powder: black tea (b / b / b) which consists of three levels, namely 80: 15: 5 (P1 ), 70: 25: 5 (P2), 60: 35: 5 (P3) and the second factor is the percentage of ginger powder (T) consisting of three levels, 2, 4, and 6%. The best treatment combination is P3T3 (proportion of kecombrang flower powder: dragon fruit peel powder: black tea 60: 35: 5 and percentage of ginger powder 6%) with chemical and sensory characteristics as follows: water content of 5.07%; antioxidant activity 74.26%; total phenol 13.01 mg TAE / g; total flavonoids 2.20 mg QE / g; 2.73 color (purplish red); kecombrang 2.38 (slightly strong); the aroma of ginger 3.25 (rather strong); kecombrang flavor 2.64 (rather strong); flavored ginger 3.37 (rather strong); and fondness 3,38 (somewhat like).
