Rempeyek adalah makanan yang berasal dari tepung beras yang dicampur dengan air hingga membentuk adonan kental, diberi bumbu dan diberi bahan pengisi yang khas, biasanya biji kacang tanah atau kedelai. Penelitian ini bertujuan untuk: 1) mengetahui pengaruh substitusi tapioka terhadap karakteristik sensori rempeyek ikan teri nasi; 2) mengetahui pengaruh penambahan baking powder terhadap karakteristik sensori rempeyek ikan teri nasi; 3) mengetahui pengaruh interaksi kedua perlakuan terhadap karakteristik sensori rempeyek ikan teri nasi; 4) mengetahui perlakuan terbaik pada pembuatan rempeyek ikan teri nasi; dan 5) mengetahui kelayakan aspek finansial pada industri pengolahan rempeyek. Penelitian ini merupakan penelitian eksperimen menggunakan Rancangan Acak Kelompok (RAK) dengan dua faktor. Dua faktor yang diteliti terdiri dari substitusi tapioka (F) dengan proporsi tapioka:tepung beras, yaitu 100:0 (F0), 90:10 (F1), dan 80:20 (F2); dan penambahan baking powder (N), yaitu tanpa penambahan baking powder (N0), penambahan baking powder 1% (N1), dan penambahan baking powder 2% (N2). Perlakuan disusun secara faktorial dengan 9 kombinasi perlakuan dan 3 kali ulangan sehingga diperoleh 27 unit percobaan. Hasil penelitian menunjukkan bahwa substitusi tapioka berpengaruh nyata terhadap variabel sensori warna dan penambahan baking  powder berpengaruh  nyata terhadap variabel sensori warna, tekstur, rasa, dan kesukaan. Sedangkan interaksi antara kedua perlakuan memberikan pengaruh yang nyata terhadap variabel sensori warna, tekstur, dan kesukaan. Rempeyek dengan formulasi terbaik adalah rempeyek dengan Proporsi tepung 100:0 dan dengan penambahan baking powder sebanyak 2%.  Hasil analisis kelayakan financial industri rempeyek memiliki total biaya investasi sebesar Rp16.442.000,00; biaya variabel sebesar Rp275.130.438,00; dan biaya tetap sebesar Rp67.200.000,00; NPV sebesar Rp44.327.510,00; IRR sebesar 48%; PI sebesar 3,70; dan PBP sebesar 2,27 tahun atau selama 2 tahun 3 bulan. Hal ini menyatakan bahwa industri rempeyek ikan teri nasi ini layak untuk didirikan.

Rempeyek is a food derived from rice flour mixed with water until a thick dough, seasoned and given a typical topping, usually peanuts or soybeans. This study aims to: 1) to know the effect of substitution of tapioca on the sensory characteristic of rempeyekikanterinasi; 2) to know the effect of baking powder on the sensory characteristic of rempeyekikanterinasi; 3) to know the effect of both aspects on the sensory characteristic of rempeyekikanterinasi; 4) to know the best formulation of rempeyekikanterinasi; and 5) to know the feasibility of financial aspect in rempeyek processing industry. This research uses Randomized Block Design. Two factors studied consisted of substitution of tapioca (F) by the ratio of tapioca: rice flour, is 100:0 (F0), 90:10 (F1), and 80:20 (F2); and addition of baking powder (N), is without baking powder (N0), addition baking powder 1% (N1), and addition baking powder 2% (N2). The treatments were arranged factorially with 9 treatment combinations and 3 replications were obtained 27 experimental units. The results showed that substitution of tapioca significantly affected on color sensory variables and the addition of baking powder had a significant effect on sensory variables of color, texture, taste, and preference. While the interaction between the two treatments had a significant effect on the sensory variables of color, texture, and preference.Rempeyek with the best formulation is rempeyek with the proportion of flour 100: 0 and with the addition of baking powder as much as 2%. The results of the financial feasibility analysis of the rempeyek industry have a total investment cost of Rp16.442.000,00; the variable cost of Rp275.130.438,00; and the fixed cost of Rp67.200.000,00; NPV of Rp44.327.510,00; IRR of 48%; PI of 3,70; and PBP of 2,27 years or for 2 years and 3 months. This states that the industry of rempeyek ikan teri nasi is feasible.
