Industri kecil menengah yang saat ini sedang dikembangkan salah satunya adalah industri gula kelapa. Agar  menghasilkan gula kelapa dengan kualitas terbaik industri gula kelapa memerlukan dokumen sistem penjaminan mutu untuk pengawasan dan pengendalian mutu sehingga mencegah banyaknya produk yang rusak dan mencegah pemborosan biaya akibat kerugian yang ditimbulkan. Tujuan penelitian ini adalah: 1) Mengetahui tingkat persetujuan terhadap dokumen pedoman mutu, prosedur mutu, instruksi kerja, dan formulir mutu, 2) Mengetahui persepsi tingkat kepentingan sisi dokumen pedoman mutu, prosedur mutu, instruksi kerja, dan formulir mutu, 3) Mengetahui tingkat pelaksanaan terhadap dokumen pedoman mutu, prosedur mutu, instruksi kerja, dan formulir mutu, 4) Mengetahui persepsi tingkat kemudahan isi dokumen pedoman mutu, prosedur mutu, instruksi kerja, dan formulir mutu. Penelitian ini dilaksanakan di Industri Kecil Menengah gula kelapa kristal Desa Sokawera, Kecamatan Cilongok, Banyumas. Penelitian dilakukan menggunakan metode kaji tindak dengan responden sebanyak 20 orang.  Data yang diperoleh dari responden dianalisis menggunakan uji t. Hasil Penelitian menunjukkan Kegiatan kaji tindak meningkatkan tingkat persetujuan, tingkat kepentingan, tingkat pelaksanaan dan tingkat kemudahan terhadap dokumen pedoman mutu, karena responden sudah diberikan informasi pada saat kaji tindak tentang isi dokumen tersebut; kegiatan kaji tindak meningkatkan tingkat persetujuan, tingkat kepentingan, tingkat pelaksanaan dan tingkat kemudahan terhadap dokumen prosedur mutu. Responden sudah menyadari bahwa pentingnya melaksanakan proses produksi sesuai dengan SOP agar selama proses produksi tidak terjadi hambatan; kegiatan kaji tindak meningkatkan tingkat persetujuan, tingkat kepentingan, tingkat pelaksanaan dan tingkat kemudahan terhadap dokumen instruksi kerja, karena responden sudah melaksanakan kegiatan proses produksi sesuai dengan SOP; kegiatan kaji tindak dapat meningkatkan persepsi tingkatpersetujuan, tingkat kepentingan, tingkat pelaksanaan, dan tingkat kemudahan terhadap formulir mutu, karena pada kaji tindak responden diberikan sosialisasi alur pelaksanaan kegiatan yang sesuai dengan SOP sehingga responden menjadi paham alurnya dan mudah dalam melaksanakannya.

Small and medium industries currently being developed one of them is the coconut sugar industry. In order to produce coconut sugar with the best quality of the palm sugar industry requires a document of quality assurance system for quality control and supervision so as to prevent the number of damaged products and prevent waste of costs due to losses incurred. The objectives of this research are: 1) To know the level of approval of the quality guidance documents, quality procedures, work instructions, and quality forms, 2) to know the perception of the importance of the quality of the quality guidance documents, quality procedures, work instructions, and quality forms; implementation of quality guidance documents, quality procedures, work instructions, and quality forms; 4) Knowing the perception of the level of ease of the contents of the quality guidance documents, quality procedures, work instructions, and quality forms. This research was conducted in Small and Medium Industry of sugar palm crystal Sokawera Village, District Cilongok, Banyumas. The research was conducted using the method of action research with 20 respondents. Data obtained from the respondents were analyzed using t test. The results of the study show that the action study activities increase the level of approval, the level of importance, the level of implementation and the level of convenience to the quality guidance documents, because the respondent has been given information at the time of action review about the contents of the document; action research activities increase approval level, importance level, level of implementation and level of ease of document quality procedures. Respondents have realized that the importance of implementing the production process in accordance with SOP so that during the production process does not occur barriers; action research activities increase approval level, importance level, level of implementation and level of ease of work instruction documents, because respondents already carry out production process activities in accordance with SOP; action research activities can improve perceptions of approval level, importance level, level of implementation, and level of ease of quality form, because the respondents' study is given the socialization of the flow of activities in accordance with the SOP so that the respondents understand the plot and easy in implementing it.
