PENGARUH PENGGUNAAN KMnO4 DAN JENIS PENGEMASAN TERHADAP UMUR SIMPAN BUAH PISANG MAS (Musa acuminata Colla AA Group)

Penelitian ini bertujuan untuk mengetahui konsentrasi KMnO4 yang paling efektif terhadap kualitas buah pisang mas, mengetahui jenis pengemas yang paling efektif terhadap kualitas buah pisang mas dan mengetahui pengaruh KMnO4 dan jenis pengemasan terhadap umur simpan buah pisang mas. Penelitian dilaksanakan Maret 2017. Penelitian ini menggunakan Rancangan Acak Kelompok Lengkap (RAKL) faktorial, dengan tiga kali ulangan yang terdiri dari dua faktor. Faktor pertama adalah konsentrasi larutan KMnO4 yaitu : Kontrol, 5%, 10%, 15%. Faktor kedua adalah jenis pengemas yaitu: Plastik Polipropilen, Plastik Polietilen, dan Kertas Kraft. Hasil penelitian menunjukkan bahwa konsentrasi KMnO4 tidak dapat mempertahankan kualitas dan mempertahankan masa simpan buah pisang mas. Jenis pengemas dapat mempertahankan kualitas dan memperlama masa simpan buah pisang mas. Perlakuan kombinasi KMnO4 10% dan 15% dengan pengemas plastik polietilen mampu menambah umur simpan buah pisang mas selama 13,3 hari.

This study aims to determine the most effective KMnO4 concentration on the quality of the banana, knowing the most effective type of packaging on the banana fruit quality and determine the effect of KMnO4 and type of packaging on the shelf life of banana. The study was conducted from December 2016 to January 2017. This study used a Completely randomized block design (CRBD), with three replications consisting of two factors. The first factor was the concentration of KMnO4 solution: Control, 5%, 10%, 15%. The second factor was the type of packaging: Plastic Polypropylene, Polyetilen Plastics, and Kraft paper. The results indicated that the concentration of KMnO4 could not maintain the quality and prolong the shelf life of banana. Types of packaging could maintain the quality and prolong the shelf life of banana. The combination treatment of KMnO4 10% and 15% with polyethylene plastic packaging could prolong the shelf life of banana for 13,3 day.
