Penelitian yang dilaksanakan di Rumah Potong Hewan Mersi, Kelurahan Mersi, Kecamatan Purwokerto, dari tanggal 15 November 2015 sampai 14 Desember ini bertujuan untuk mengetahui ukuran dan mengkaji hubungan antara panjang badan, lingkar dada, dan tinggi pundak dengan luas urat daging mata rusuk sapi Simmental. Penelitian ini menggunakan 30 ekor sapi Simmental jantan. Metode yang digunakan adalah metode survei dengan teknik pengambilan data menggunakan pendekatan purposive sampling. Data yang diperoleh dianalisis secara statistik dengan regresi berganda, koefisien determasi dan uji ANOVA, apabila signifikan; maka dilakukan Uji t. Berdasarkan hasil analisis statistika menunjukkan bahwa karakteristik kuantitatif sapi Simmental jantan untuk yaitu PB 150,70 ± 5,74 cm; LD 199,43 ± 4,75 cm; TP 141,33 ± 5,63; dan Udamaru 165,50 ± 6,37 cm2. Hasil analisis regresi berganda menunjukkan bahwa Luas Udamaru  = 106,76 + 1,51 PB – 1,12 LD + 0,39 TP. Analisis uji t parsial menunjukkan bahwa PB, LD, dan TP mempunyai hubungan yang nyata (P<0,05) dengan Luas Udamaru. Berdasarkan hasil penelitian ini dapat disimpulkan bahwa PB, LD, dan TP mempunyai korelasi positif dengan Luas Udamaru sapi Simmental.

This research, was conducted from November 15 to December 14, 2015 at RPH Mersi, Purwokerto. The aims of the research was to determine the size of and examine the relationship between the body lengths, chest, and the shoulder height, with the loin eye area of Simmental bulls’. This research used 30 Simmental bulls as the materials. This research used a survey as the method and a purposive sampling approach to take the data that would be analyzed by using the multiple regression, correlation coefficient, determination coefficient, ANOVA, and t tests. The results show that the quantitative characteristics of the bulls’ body length was 150,70 ± 5,74 cm; chest was 199,43 ± 4,75 cm; shoulder height was 141,33 ± 5,63; and their loin eye area was 165,50 ± 6,37 cm2. The results of multiple regression analysis showed that loin eye area= 106,76 + 1,51 Body Lengths – 1,12 Chest + 0,39 Shoulder Height. The partial regression test analysis show that the body length, chest, and shoulder height have a significant correlation (P<0,05) into the loin eye area of Simmental bulls’. Based on these results, it can be concluded that the Simmental bulls’ body length, chest girth, and shoulder height have a positive correlation with their loin eye area.
