Industri Kecil Menengah (IKM) Jenang jaket ‘ASLI’ merupakan penghasil jenang ketan di Purwokerto dimana posisinya menjadi IKM unggulan. Sistem manajemen mutu  diperlukan untuk mendukung usaha kegiatan industri agar layak seperti perusahaan global, yang mampu menembus pasar di berbagai negara dan masyarakat luas. Adanya sistem penjaminan mutu yang baik, konsisten dan berkelanjutan menjadi sebuah tuntutan konsumen terhadap tersedianya produk yang aman dan bermutu. Tujuan khusus dari penelitian ini adalah perancangan dokumen Sistem Penjaminan Mutu. Adapun tujuan umum penelitian ini, yaitu: 1) Mengetahui tingkat kepentingan dan tingkat persetujuan responden terhadap dokumen Pedoman Mutu; 2) Mengetahui tingkat kepentingan dan tingkat persetujuan responden terhadap dokumen Prosedur Mutu; 3) Mengetahui tingkat kepentingan dan tingkat persetujuan responden terhadap dokumen Dokumen Instruksi Kerja; dan 4) Mengetahui tingkat kepentingan dan tingkat persetujuan responden terhadap dokumen Dokumen Formulir Mutu. Hasil penelitian menunjukan bahwa tingkat penerimaan Dokumen SPM meliputi, dokumen Pedoman Mutu pada tingkat kepentingan dan tingkat persetujuan pada golongan pakar/ahli sebanyak 95% dan 86%, untuk golongan instansi terkait 97% dan 86%, pemilik dan karyawan sebanyak 89% dan 83%. Dokumen Prosedur Mutu pada tingkat kepentingan dan tingkat persetujuan sebanyak 97% dan 90% pada golongan pakar/ahli, 93% dan 80% untuk instansi terkait, pemilik & karyawan sebanyak 86% dan 81%. Dokumen Instruksi Kerja pada tingkat kepentingan dan tingkat persetujuan sebanyak 90% dan 93% pada golongan pakar/ahli, 92% dan 91% untuk golongan instansi terkait, karyawan & pemilik sebanyak 89% dan 88%. Dokumen Formulir Mutu pada tingkat kepentingan dan tingkat persetujuan sebanyak 94% pada golongan pakar/ahli, 95% dan 87% untuk golongan instansi terkait, karyawan & pemilik sebanyak 90% dan 85%.

Small and Medium Enterprise (SME) of Jenang jaket (ASLI) is one of the producers of jenang ketan in Purwokerto, where it is position became superior SME in producing jenang. Quality management system is required to support the business activities to run as a global company, that is able to compete with markets in many countries and various communities. The existence of a good, consistent and sustainable quality assurance system is demanded by consumers to ensure that the products are safe to be consumed and qualified. The specific purpose of this research was document design of Quality Assurance System. As for the general purpose of this research was to: 1) determine the level of interest and the level of acceptance of respondents on Quality Guide document; 2) determine the level of interest and the level of acceptance of respondents on Quality Procedure document; 3) determine the level of interest and the level of acceptance of respondents on Work Instruction document; and 4) determine the level of interest and the level of acceptance of respondents on Quality Form document. The research result indicated that the level of acceptance of Quality Assurance System document included, Quality Manual document at the level of interest and the level of acceptance of 95% and 86% on group of experts/specialists, 97% and 86% on the group of relevant institutions, 89% and 83% on owner and employees respectively. Quality Procedure document at the level of interest and the level of acceptance was 97% and 90% on the group of experts/specialists, 93% and 80% on relevant institutions, 86% and 81% on owner and employees. Work Instruction document at the level of interest and the level of acceptance was 90% and 93% on the group of experts/specialists, 92% and 91% on the group of relevant institutions, 89% and 88% on owner and employees, respectively. Quality Form document at the level of interest and the level of acceptance was 94% on the group of experts/specialists, 95% and 87% on the group of relevant institutions, 90% and 85% on owner and employees.
